Chefs preparing sushi at the Kurosei counter in low light
Duxton Hill · Singapore

Seasonal omakase.
Quiet precision.

An intimate fourteen-seat counter in Duxton Hill, shaped by seasonality, restraint, and chef-led progression.

Philosophy — I

Luxury, expressed through discipline.

A limited number of seats. A carefully paced sequence. Ingredients selected for season, texture, and balance. Service designed to guide, not interrupt.

Seasonality

Menu shaped by the season.

Seafood shipments arrive directly from Toyosu several times weekly. The menu moves with what is at its peak.

Sequence

A progression, not a list.

Every course is placed for temperature, salinity, and rhythm. The meal is composed as a single arc.

Service

Attentive, not intrusive.

A small team moves with the chef's pacing. Explanations are concise. The room stays quiet.

The Experience — II

A chef-led progression, designed around rhythm and seasonality.

From rice temperature and knife work to pairing progression and service timing, each element is calibrated to create a meal that feels intimate, precise, and deeply considered.

Choose from a seasonal lunch omakase, a full evening progression at the counter, or a private dining experience for hosted occasions.

The Chef — IV

Led by Chef Ren Takahashi.

After training in Tokyo in traditional sushi preparation and working in modern fine-dining kitchens across Singapore and Hong Kong, Chef Ren developed a philosophy rooted in restraint: fewer gestures, deeper attention, and total respect for sequence and timing.

Kurosei was founded as a room where the discipline behind Japanese fine dining could be experienced without excess — where the craft is unmistakable, but never overexplained.
