At Kurosei, the omakase is approached as a single composition rather than a set of courses. The meal is shaped over months of sourcing, seasonal testing, and rice work — and then released to the guest only once the progression feels inevitable.
Rice is cooked in small batches throughout service. Fish is aged selectively, never by formula. The pace is set by the chef, but always read from the room.

The evening progression unfolds at the counter across roughly two and a half hours. The pacing is slower, the sequence more layered, and the pairings more fully realised.
Our beverage programme is curated to extend texture and minerality, never to overpower. Four structured options are available; non-alcoholic progressions are built to equal standard.

To preserve the pacing of the meal, we ask guests to arrive on time. The full experience runs approximately 2.5 hours at dinner and 1.5 hours at lunch.
